
Every now and then, I get the itch to bake, and usually it is when I am craving something sweet. One of my favorite fall recipes is my friend Diane's pumpkin bread. I am extremely picky when it comes to any kind of "breads." Most are too dry for my liking. This recipe, however, turns out perfectly every time!
These are the ingredients you will need for this recipe:
INGREDIENTS:
3 1/2 Cups flour
1 tsp. salt
2 tsp. soda
1 tsp. nutmeg
1 tsp. cinnamon
3 Cups sugar
1 Cup oil
4 eggs
2 Cups (1-15 oz. can) pumpkin
2/3 Cups water
Mix flour, salt, soda, nutmeg, and cinnamon together.
Cream: sugar, oil, and eggs (add one at a time).
Add flour mixture to sugar mixture.
Blend pumpkin with water and add to above.
Grease and flour 2 loaf pans.
Pour mixture evenly into pans.
Bake at 350 degrees for 1 hour. (May take a little longer; test with a toothpick).
Let cool for 15 minutes. Turn out on racks.
When I say this recipe turns out perfectly every time, I mean it makes the prettiest bread! I love eating this pumpkin bread with coffee and usually make it about 4 times each fall/winter. I also love to give this bread as a gift during the holidays. I put mine in the Mackenzie-Childs loaf pan, which, I think, would make an extra special gift for someone!. I hope you enjoy!

I always make 2 pans; sorry maybe I didn’t put that in recipe! I think these would also be good as muffins and would make so many.

What type of oil?
I use canola oil. Some have substituted applesauce for a healthier version, but I haven’t tried yet.
