Every now and then, I get the itch to bake, and usually it is when I am craving something sweet. One of my favorite fall recipes is my friend Diane’s pumpkin bread. I am extremely picky when it comes to any kind of “breads.” Most are too dry for my liking. This recipe, however, turns out perfectly every time!
3 1/2 Cups flour
1 tsp. salt
2 tsp. soda
1 tsp. nutmeg
1 tsp. cinnamon
3 Cups sugar
1 Cup oil
2 Cups (1-15 oz. can) pumpkin
2/3 Cups water
Cream: sugar, oil, and eggs (add one at a time).
Add flour mixture to sugar mixture.
Blend pumpkin with water and add to above.
Grease and flour 2 loaf pans.
Pour mixture evenly into pans.
Bake at 350 degrees for 1 hour. (May take a little longer; test with a toothpick).
Let cool for 15 minutes. Turn out on racks.
